Smelly tofu 臭豆腐

There are many wild goosefoots in the field.
田間長了許多野莧菜.
I’ll make the smelly juicy when they get tough.
老莧菜可以做臭滷.
Smelly tofu is tofu marinated in the smelly juicy.
將豆腐浸泡臭滷便成臭豆腐.

2.Smelly juice 2.臭滷

莧菜長大,
The goose foots are getting tougher,
是做臭滷的時候了.
It’s about the time to make the smelly juice.
除去菜葉,
Take off all the leaves,
菜桿切小段後裝入容器.
Chop the stems in small pieces and put them in container.
將小段菜桿拌鹽過夜.
Blend the segments with salt overnight,
次晨倒棄新出鹽汁.
Then dump the original salty juice next morning.
蓋緊蓋子.
Close it tightly.
置容器於陰涼處.
Leave in cool,
一年半載, 自成臭滷.
It’ll turn to smelly juice naturally in half or one year.

*使用葉片以增加滷汁.
Take the leaves for more juice.

3.Fry the smelly tofu 3.炸臭豆腐

豆腐浸臭滷二至三小時(依天氣冷熱而定, 熱二冷三).
Tofus marinate in smelly juice for 2 to 3 hours(depends on the whether,H2C3).
深鍋放油, 比二分之一豆腐略高.
Pour oil, little higher than 1/2 of the tofu, in the deep pot.
熱油鍋至滾, 下臭豆腐.
Bring the oil to a vigorous boil, bring the smelly tofus in.
不隨便攪動油鍋, 直到豆腐在油中變金黃.
Until the smelly tofus have turned into golden brown, leave them down to the pot.
用竹筷略推, 使臭豆腐浮起.
Lightly push the smelly tofus with bamboo chopsticks to have them floated.
臭豆腐翻面, 面面炸黃, 盛起裝盤.
Turn the smelly tofus to assure every side is golden brown, then serve in the plate.
蒜末,醬油, 辣椒,..等做成沾料.
Mix chopped garlic, soy sauce, chopped hot pepper etc…..for dipping.
***使用小型鍋省油, 但費時.
***Small pot saves oil, but costs time.
