Turkey leg 火雞腿

“One leg?”
“一個火雞腿?”
“OK!”

Farmer’s simple food—-Herb turkey leg
農家食譜—-草香火雞腿
1 turkey leg, cut several slits
火雞腿一隻, 切幾個長細縫
2 tablespoons rice wine
米酒, 二湯匙
1 cup soy sauce
醬油, 一杯
2 teaspoons salt, or to taste
鹽, 二茶匙或酌量
Honey or sugar, to taste
蜂蜜或糖, 酌量
1 handful of herbs, such as rosemary, oregano,
tarragon, sage…
草香料一把, 迷迭香, oregano, 艾草,鼠尾草等等
Method
方法
Marinate the turkey leg with rice wine, soy sauce, salt,
honey or sugar and herbs for 2 hours.
酒,醬油,鹽,蜂蜜或糖和香料醃火雞腿二小時.
Discard the herbs.
丟棄草香料.
Put the rest, turkey leg and marinade, in a pot.
火雞腿和滷汁放進鍋.
Bring it to the boil, then simmer for about 1&1/2 hour.
大火滾後,小火燉煮約一小時半.

It takes 1 whole day thaw a frozen turkey over 15 lb. thoroughly.
冷凍火雞完全化冰需一日.
Another 1 whole day to marinate, turn it over at times.
另需一日醃火雞,有時給它翻個面.
Get started 2 days in advance.
所以得在兩天前開始準備.
