Roast foil-sealed duck 燜烤鴨

If  turkey is too heavy, duck will be a good choice for the holiday.
過節嫌火雞太大, 不妨選鴨.

Farmer’s simple food—-Roast foil-sealed duck

Duck, 2-3lb., rinsed and dried
Ginger,1-2 slices, minced
Rice wine, 2Ts
Salt, 1-2 pinches, or to taste
Aluminum foil
Some veggies

Method

Place duck on oven tray
Rub ginger, rice wine and salt into duck, inside and out 1Ts rice wine each
Seal oven tray with aluminum foil
Preheat over to 375F
Roast duck 1 lb for 30 min., 2 lb for 60 min….etc.
Time’s up, oven off and leave duck in oven till cool down
Remove duck from oven,  cut as desired

農家食譜—–燜烤鴨

鴨,2-3磅,清洗待乾
薑,1-2片,切絲
米酒, 2湯匙
鹽,1-2撮, 或酌量
錫紙
蔬菜

做法

鴨置烤盤
薑,酒與鹽搓揉入鴨身, 內外各ㄧ湯匙米酒
錫紙密封烤盤
烤箱預熱華氏375度
1lb鴨烤30分鐘, 2lb烤60分鐘,….類推
到時熄火, 鴨留烤箱燜至涼
移鴨出烤箱, 切斬隨意
