Farmer’s simple food—-Taro duck, plenty supply in four seasons
Duck, 3-4 lb, cleaned
Pork, 80% lean, small piece(for flavor)
Taro, 1 head, sliced
Green onion, few, inch long
Rice wine, 2 Ts
Soy sauce, 1 cup
Salt, 2 ts
Method
Add water over duck(with pork) 1 inch in pot, bring to a boil then simmer 1 hour
Add rice wine, simmer 1 hour
Add soy sauce and salt, simmer 1/2 hour
Steam taro to slim in rice cooker, mix with duck juice
Stuff the taro mixture in duck, return and simmer 1 more hour
Carefully remove the duck to plate, sprinkle green onion and duck juice

農家食譜—-芋頭鴨,四季豐裕
鴨, 3-4磅, 洗淨
肉, 略帶肥, 一小塊 (增鮮用)
芋頭, 一個, 切片
葱, 數根, 吋段
米酒, 2湯匙
醬油, 1杯
鹽, 2茶匙
做法
水蓋過鴨1吋, 鴨,肉同煮滾, 轉小火燜1小時
加米酒, 小火燜1小時
加醬油,鹽, 小火燜1/2小時
芋頭置電鍋蒸軟泥, 拌鴨滷汁
取鴨, 芋泥塡鴨. 回鍋再燜1小時
小心將鴨裝盤, 上撒蔥段, 淋鴨滷汁
