Wild mustard/Stir fry bamboo shoot, pork and pickled wild mustard 野芥菜/鹹菜小炒

Wild mustard plants grow everywhere on the field.

Pick tender leaves on top of the plant, leave in cool for few days till wilt.
摘取嫩芽頭, 置陰涼處數日待萎.
One layer of wild mustard leaves add 1 ts(or 1 pinch) salt, rub well
一層芥菜葉放一小匙(或1小撮)鹽, 搓揉勻

Become pickled after 7 days
Farmer’s simple food—-Stir fry bamboo shoot, pork and pickled wild mustard

Pickled wild mustard, chopped well, microwaved 2 min over high
Bamboo shoot, 1/2 or 1pc., shredded
Pork, shredded, marinated in rice wine, soy sauce and tapioca flour
Oil, 2 Ts Water, 1/4 cup
Salt or/without, to taste

Pour oil in fry pan over high heat
Add pork, stir fry till lose bleeding, then set aside
Add pickled wild mustard, stir fry for 20 sec.
Add water, cook for 2-3 min. or till the pickled wild mustard soft
Add bamboo shoot and pork, mix well and cook for 1 min.
Add salt or without, to taste




鹹菜, 剁碎, 高溫微波2分鐘
筍, 1/2或1個, 切絲
豬肉, 切絲並用酒醬油太白粉醃漬
油, 2湯匙 水, 1/4杯
鹽或無, 隨意

入豬肉, 炒至失血, 置一邊
入鹹菜, 炒20秒
入水, 煮2-3分鐘或鹹菜煮軟
入筍與豬肉, 混煮1分鐘
入鹽或無, 隨意
